Evolution of Smoked Bacon Candy:
Several years later (And about 6 smoker size upgrades) I had a private backyard party in which my team and I discovered pig candy. We were not very impressed. Saying it was too salty and dipped was to sweet. So over a nice bon fire and several beers, we decided to join in the endeavor of smoking pig candy. Our first batch was quite delicious, but it was very sticky and we knew there would be a better way to enhance and infuse flavor into this thick cut of deliciousness. Again, back to the drawing board- The next weekend comes and we attempt this again with a sugar blend - Presto we fell in love! This thick cut of delicious bacon was so beautiful looking and tasted like nothing we have ever had before!
